Description
Energetic Profile: Fennel has been used as a culinary and medicinal herb for thousands of years. It was used by the Romans and Egyptians for its ability to invigorating, stimulate and energize. It holds a rich spiritual significance according to ethnobotanical studies. It symbolizes protection against evil, purification, longevity and mental clarity. Dionysus staff was often represented as a fennel stalk. Fennel was also associated astrologically with the god Mercury representing transformation.
Smell: Again, another perfectly and sensitively distilled oil from our friend in France, Manu. He has managed to capture the typicity of fennel seeds with its aniseed note, but it also includes a rich, soft, comforting fullness without being overpowering that I believe is unique to him as a distiller.
Perfume: Middle note
Main Chemical Constituents: trans-anethole, fenchone, limonene. It can vary a lot.
Adulteration and quality: In large scale international trade, voluntary and or involuntary confusions with star anis, anis seed is noted. Synthetic anethole is also a problem with cheaper oils. Another quality issue is excessive heat during distillation which degrades certain molecules and results in a bitter smelling oil.
